Preheat the oven to 200 °C. Cut 500 g boneless, skinless chicken thighs into chunks. Dice 1 red bell bell pepper, 1 yellow bell bell pepper, 1 orange bell bell pepper and 1 medium onion. In a bowl, mix the chicken, vegetables, 1 teaspoon cumin, black pepper, salt and olive oil. Then pour into a pan and bake for 25 minutes until the chicken is cooked and the vegetables are tender. Serve with tortillas, sour cream and chopped cilantro.

Rice salad

This is certainly a different way to eat rice, but it is still packed with nutrients.
Cook 2 cups of brown rice according to package directions. Set aside. For the dressing: whisk together ½ cup cilantro, 1 clove garlic, the juice of 2 limes, ¼ cup olive oil and salt until smooth. Pour the dressing, 1 finely chopped red bell bell pepper, 350 g cooked and drained black beans, 1 finely chopped red onion, 150 g cooked corn kernels and the brown rice into a bowl and mix until completely combined. Refrigerate for at least 2 hours until the flavors blend. After this time, take out and enjoy.
